I’ve hooked to Pinterest lately. I found some super cute eggs and bacon prepared in a muffin pan, but my bunch doesn’t like sunny side up eggs. So I had to alter the recipe a little bit. (Forgive the horrible pictures)
Im cooking for 5, so consider that you can break this down however you would like. I guess if you wanted you could really just cook this for one!
Heres what you need:
1/4 cup milk
2 cheese slices
1/2 cup shredded cheese
Bacon (I used turkey bacon)
Pre heat oven to 400.
Cut your uncooked bacon in half.
Lay two pieces of bacon in each muffin tin spot- creating X’s in each one. (if you use turkey bacon remember to spray the muffin pan with PAM, so it won’t stick.
Now mix the eggs and milk.
Tear up the cheese slices and put into egg mix.
Pour egg mix into muffin pan, fill about 3/4 of the way as it will expand some.
Top each one with shredded cheese.
Cook each one for 12 minutes, though I would check at the 10 minute mark as I like my eggs to be super firm.
Salt and pepper to taste.
